Bekele Balaycho, the de-facto leader of a collective of independent smallholder farmer-exporters around Bensa, runs his family’s farms and drying stations with care and precision. Working with over 100 neighboring producers, he invests in shaded drying and meticulous natural, anaerobic and lactic processes to elevate every cherry he buys.
