Meet the Makers
On their first date in 2019, Hayley told Logan that her dream was to open a bakery. Four years later, they made that dream a reality.
When they first started dating, Hayley was teaching Logan how to make sourdough bread. They actually started the Roux sourdough levain together during COVID lockdown.
A levain is a portion of an active sourdough starter that is separately fed and fermented.
Hayley’s first baking endeavour was named Palmer's Baked Goods, named after her grandmother who inspired her love of baking. In 2021, Logan created a website so that Hayley could sell sourdough and croissants through online orders. This then expanded to selling at markets and eventually found its own space to open Roux, combining Logan's passion for coffee roasting and Hayley's background and passion for baking.
Meet the Baker
Hayley's passion for food began as a child, baking with her mom, sister and grandmothers. Her childhood passion for baking never went away.
She went to the University of Guelph to study Applied Human Nutrition and then continued her education at George Brown College to study Culinary Management. Following this, she gained years of culinary experience at The Four Seasons and top sourdough bakeries. She started selling her baked goods in 2017, and that eventually evolved into opening Roux Bakehouse.
Since joining forces with Hayley's business (and life) partner Logan Fuller in 2024, Roux has been able to bring the same passion for specialty coffee that Hayley brings for artisanal baked goods.
Meet the Roaster
Logan’s passion for coffee started with his own at-home coffee set up. He then met KW Coffee Collective Founder Ron Donaldson at the Mary Allen Farmer’s Market, who began teaching him the ins and outs of coffee roasting. Logan took it from there, developing his style of roasting that enhances the natural flavours in the beans and the regions they come from.
Logan loves working with the baristas to get the most out of the beans and building relationships with coffee farmers and suppliers.
Why "Roux"?
Hayley and Logan wanted to focus on specialty coffee, baked goods, and sourcing high quality, locally-farmed milk. Pairing high-quality milk with specialty roasts in coffee drinks is a must at Roux.
What do you get when you mix milk and flour? A Roux! A Roux in french cooking is a mixture of butter and flour used to thicken sauces and soups.
